Pesto
all Genovese
INGREDIENTS
- 2 bunches fresh basil
- 1 or 2 cloves garlic
- 2 tablespoons pinoli nuts
- 1 oz parmesan cheese
- 1 oz pecorino cheese
- 1 cup olive oil

Wash
basil leaves, and pat them dry, then put in the blender. While blending,
add the oil, pinoli nuts, a pinch of salt, and the cheese. Blend into
a smooth paste. Stir in the rest of the oil until you obtain a thick
and smooth sauce.

al Pesto |
INGREDIENTS
1 pound linguini
3 or 4 potatoes, diced
1/2 pound string beans
|
Boil the potatoes and the string beans separately. Cook the
linguini as directed and mix in the potatoes and beans. Season
everything with the Pesto alla Genovese and serve with parmesan
cheese to taste. |
